Tjóðhild, Anna Malan, Barbara: A declaration of love to Nólsoy

Mazuhn May 25, 2016

The wooden door opens up, Anna Malan Jógvansdóttir (21) enters the room, sleeve of her jacket pulled over her left hand, carrying a bunch of nettles. Behind a counter, she puts the nettles into tumblers, gets herself a plate and boils water. Very shortly afterwards, we are sitting at one of the tables in Pakkhúsið hjá Petersen on Nólsoy …

Facts and fiction: About an hour on undir Bryggjubakka

Mazuhn May 20, 2016

A sunny day in May. Freshly squeezed orange juice, a steaming cup of coffee and a table right in front of the Kaffihúsið at the port promenade undir Bryggjubakka in Tórshavn. On the opposite hillside: White, red and yellow houses, protected by red, green and black roofs. And then, this guy with a mysterious briefcase shows up at the marina …

Why even more TV broadcasters should present Spískamarið

Mazuhn April 15, 2016

Lucky Swedish. The Faroese food and culture show Spískamarið (English title: The Nordic Pantry) has been picked up on Swedish television network SVT. Audiences in Norway and Finland are supposed to follow later this year. I believe that even more TV broadcasting companies should get in line quickly. And this is why …

Ræst: The thrilling extension of the flavor zone

Mazuhn February 28, 2016

It’s been dawning on me for quite some time that an invisible network is spreading across the globe. Concerning the network that has come to my mind, the hjallur is one of the points of origin. Ræst is unique to the Faroe Islands, it’s a special method of semi-drying, and it is characterized by its strong umami flavor, the fifth flavor …

The Wasabi-Philosophy: Sushi In Tórshavn

Mazuhn December 4, 2015

One of my favored memories of 2009: Singing ABBA’s Voulez-Vous in a karaoke bar in Tokyo and enjoying sushi afterwards. It has appeared that precisely in the same year, Johannes Jensen opened his sushi restaurant in the Faroe Islands. His idea: If you have one of the world’s best fish around, you should serve it in the best possible way …

Swiss-born Karin Visth Is The Queen Of Wines In The Faroes

Mazuhn November 2, 2015

The sound of tires on gravel ground. A car door slams, followed by footsteps. Karin Visth (28) has arrived in our village, she is visiting, and she tells me joyfully that she is celebrating a special jubilee. Exactly two years ago, she began work as a sommelière at the Faroese gourmet restaurant KOKS …

What A Rope Is Really Made For

Mazuhn July 31, 2015

Some of you might think they know what ropes are made for. I can hear you saying: A rope is made for mooring a ship in the harbor. Or: I use it to climb up the mountains. Not to mention other possible responses to my question. Well, you are all wrong. A rope is made for fish soup …
